Preparation Uppumanga and uppumanga Chammanthi




Ingredients for the preparation of Uppu Manga


1.Mangoes - 1/2 kg
2.Salt as needed
3.Water - 1 1/2 cup

Preparation

1.Wash the mangoes really well and pat dry them.Then Boil the water in a vessel and allow it to cool.

2.Put the mangoes in a big ceramic jar called Bharani.Then to it add the boiled water and salt as needed.

3.But as it is a highly saline solution you have to add more salt to it.

4.Make the jar air tight and keep it for at least 1 month before you start it using.It can be keep for 1 year.



Ingredients For Uppumanga chammanthi


1.Uppumanga - 1
2.Green chillies - 2 or 3
3.Small shallots/kunjulli - 4 or 5
4.Grated coconut - 1 cup
5.Curry leaves


Preparation

1.Cut the mangoes in pieces with the skin and grind them with other ingredients in a blender.You can use the water from the uppumanga for to adjust the taste.
