It has a lot of name like luaki ka halwa,dhoodhi ka halwa ,bottle guar halwa etc,all are the same.It is very popular sweet in Punjab also in other north indian states.Very easy one to prepare,with least number of ingredients.In my previous post i have already discussed about the making of Khoya/Mawa which is going to used here.
Ingredients needed to make Doodhi Ka Halwa
1.Dhoodhi/bottle guard - 1 no
2.Milk - 1/4 cup
3.Sugar as needed
4.Ghee - 4 to 5 tsp
5.Kismiss/Raisins - 50 gm
6.Cashew nuts - 50 gms
7.Badam one handfull
8.Mawa - 1/4 cup
How to make the Doodhi Ka Halwa/Lauki ka Halwa
1.Clean the outter skin of lauki
2.Now grate the bottle gaurd in to small pieces in a grater just like we do with carrot for carrot halwa.
3.Check whether the lauki is bitter or not.
4.Now heat the ghee in a pan and fry the cashew nuts ,raisins and badam in it.
5.Now add the lauki in it and saute it well.After 2 mts add the milk to it and cook it again.
6.When it almost dry add the mawa and sugar in it.Mix it well.
7.In order to get the exact color of halwa you can add the green color to it.
When it becomes dry the halwa is ready to be served.
