Rasmalai


Rasmalai is a popular Indian sweet.Rasmalai is basically a north indian sweet dessert.Ras Malai consists of sugary white, cream or yellow colored balls soaked in Rabri or malai.

Ingredients

For making the Malai or Rabri

1.Milk - 1 litre
2.Sugar - 4 tsp

For Making the balls

1.Milk - 1 litre
2.Sugar - 1 cup
3.Cardamom crushed - 1 tsp
4.Almonds and pista - 1 tsp each
5.Ice cubes - 2 cup
6.Lemon juice /acetic acid diluted with water - 2 tsp


Preparation

1. Boil the one litre milk for nearly one hour to make it in thicker form for the malai.When it is done add the cardamom powder and sugar to it and keep it aside.

2.Then in another pan boil the milk to make paneer or the balls.When the milk is boiled to this add the lemon juice or acetic acid .Then immediately add the ice cubes to it.

3.You have to be alert during the making of paneer .The milk should be boiled well and you have to add the acids as you required ,we need soft paneer.And ice should be added immediately.

4.When it is done pour it in to a thin cloth and squeeze out the water in it. Hang in muslin for 1 hour, but do not press it. And dry it with another cloth.

5.Knead paneer until very smooth with in the cloth . Make into walnut sized balls, flattening them a little, like a ‘peda

5.Boil water and 1 cup of sugar and 6 cups of water in a deep vessel until it boils vigorously .Add some crushed cardamom to it.

6.Add to boiling water/sugar water.and boil at high flame and the rasgullas will be ready in 10 mts.

7. Remove and let it sit in some of same syrup till it cools down squeeze out the water .

8.In another plate take 2 of the balls and pour some malai on it and garnish it with almonds and pista.

Now it is ready to serve....
