Ingredients
1.Baby Brinjals - 6 no
2.Roasted groundnuts - 2 tsp
3.White sesame seed - 2 tsp
4.Grated coconut - 2 tsp
5.Ginger garlic paste - 2 tsp
6.Coriander seed - 1 tsp
7.Onions chopped - 1 medium
8.Red chilli powder - 1 tsp
9.Turmeric powder-1/2 tsp
10.Coriander powder -1 tsp
11.Tamarind small lemon size
12.Salt
13.Oil - 4tsp
14.Chopped coriander leaves- 4 tsp
15.Cumin seeds/jeera - 1 tsp
Preparation
1.Slit the brinjals in sides without cutting completely.Put little salt inside the brinjal.
2.Roast the sesame seed ,ground nut,coriander seed ,cumin seed till it become light brown.
3.Then ground it with coconut by adding little water to make a thick gravy.
4.Heat 2 tsp oil and fry the brinjals till it becomes soft and smooth.Then drain it out from the oil and keep it aside.
5.In the same oil add rest of the oil and saute the onions ,ginger,garlic paste and when it is saute well add the grounded paste to it.
6.To this add the turmeric powder,cumin powder,chilli powder,coriander powder with salt and mix it well and cook it a few minutes.
7.Now add the tamarind pulp made from 1 cup of water and mix it well.
8.Now add the fried brinjals to it and cover the pan with lid and cook on medium flame for 5 to 10 mts until the gravy becomes thicken .
9.Now turn off the fire and garnish with the coriander leaves.
