Farfalle with pesto - Prachi's Favorite dish






I got this recipe from the Times Of India News Paper.From the "CELEB COOK- IN "",Prachi Desai's" favorite pasta favorite is "Farfalle with Argugula pesto sauce".The dish is prepared by "Chef Marco ,Italian Chef at the Leela ,Mumbai".


Farfalle are a type of pasta which usually have distinct shape.Usually, the farfalla is formed from a rectangle or oval of pasta with two sides trimmed in a ruffled edge, and the center pinched together to make the unusual shape.


And arugula is an aromatic green salad ,popular in Italian dishes.


Ingredients


1.Boiled farfalle pasta - 500 gm
2.Basil leaves - 10 no
3.Arugula - 30 gm
4.Garlic cloves - 3
5.Olive oil - 1 cup
6.Grated cheese (parmesan) - 50 gm
7.Pine nuts - 30 gm
8.Salt


Preparation


1.Boil the pasta for 7 to 8 mts add a few drops of olive oil to it so that the pasta do not stick together.

2.Chill the basil leaves,arugula leaves in cold water for 15 mts.or keep it in freezer for 30 mts.

3.Put all the ingredients in blender and blend it for about one minute.

4.You will get a creamy sauce with which you can dress the pasta.It is important to dilute it with some cooking water to make it smoother.

5.Add pasta to a pan add the pesto sauce to it .Either add some cream to it or add olive oil to get the right consistency.

6.Heat and stir well.Garnish with some parmesan cheese and serve hot.

The pesto sauce remains in freezer for several months.
