This is something i found similar to our mooru curry ,but the Andra people are using more vegetables in this curry .But its taste good some how we also have to try the recipie of different places.This will be in pale yellow color and the spiciness is given by the green chillies .
Ingredients
1.Curd - 2 cups
2.Drum stick - 4 pieces
3.Ash gourd - 1/4 cup
4.Bottle gourd - 1/4 cup
5.Brinjal - 2 no
You can use the vegetables according to your choice.
6.Onion sliced - 1
7.Water - 1 cup
For the paste
1.Coconut - 1/2 cup
2.Green chillies - 5
For seasoning
1.Mustard seeds - 1/2 tsp
2.Methi seeds - 1/4 tsp
3.Cumin seeds - 1/2 tsp
4.Ginger chopped - 1 tsp
5.Turmeric powder - 1/4 tsp
6.Hing /Kayam/Asafoetida - a pinch (optional)
7.Curry leaves
8.Dry red chillies - 2
Preparation
1.Cook the vegetables by adding 1 cup of water and salt to it.
2.Make fine paste of coconut with green chillies .
3.Mix the curd with the coconut paste and keep it aside.
4.Heat the oil in a pan, splutter the mustard seeds and add the cumin seeds, methi seeds and let them turn slightly brown.
5. Add the curry leaves, red chillis and asafoetida, turmeric powder to it and saute it for a few seconds. Add the onions and saute for 5 mts .Then add the cooked vegetables to it along with water if any left there.
6 Add the curd-coconut mixture to the vegetables and on low heat, cook stirring continuously. Do not boil. Turn off heat. Cover lid and let it sit for a few minutes before serving for the flavors to absorb.
Serve it with rice and achar....
