Lakkottappam a snack from malabar

Ingredients

1.Maida - 1 cup
Egg - 1
Salt a pinch
3.Ghee - 2 Table spoon
Sugar - 5 table spoon
Egg - 5 no
4.Cardampm powder - 1/2 tsp
5.Cashew Nuts - 100 gm
Raisins - 100 gm
Sugar - 2 table spoon
Ghee - 1 tsp


Preparation


1.In a bowl mix the maida with egg and a pinch of salt add water as needed to mix it .It should be in the form of dosa batter.

2.Beat the 5 eggs with a spoon then heat the ghee in a pan and fry the eggs in it .Then to this fried eggs add sugar and cardamom powder mix it well with a spoon.

3.In the same pan heat the ghee and then add the cashew nuts and raisins to it .when both are fried well add the sugar to it and keep it aside.

4.Now heat the tava and pour the maida mix to it make it in to the shape of small pancake.

5.When the pancake is done add the egg filling to it and fold it from 4 sides.

6.Then make another pancake which is bigger in size than the first one.Then place one spoon of cashew mix in it and also place the first pancake inside it.Then fold in from 4 sides and cook it.

7.Then make another pan cake which is bigger than the second one and fill the egg mix in it .Also place the second pancake in it and fold it.

8.Make a little sugar syrup by adding 2 drops of rose water to it and pour this on the top of the lakkottappam.

Now the delicious malabar snack is ready to be served.........

Pulivaral Snack from Malabar

Ingredients

1.PonniRice - 150 gm
2.Jaggery - 1/2 kg
3.Mysore banana or poovan Pazham - 1/2 kg
4.Rava - 1/4 cup
5.Egg - 1
6.Cardamom powder - 1 pinch
7.Oil as needed to fry

Preparation


1.Soak the rice in water for 5 to 6 hours.

2.Melt the jaggery in little water.Grind the soaked rice and mix it with melted jaggery.

3.Grind the banana in a mixer and mix it with the rice jaggery mixture.

4.Then add the rava,maida,egg,cardamom powder to it and mix it well using your hands.The mixture should be thick.

5.Heat the oil in a pan and then take the batter in your hand and pour it in the heated oil like the form of tamarind or puli.

6.Then deep fry it in the oil till it becomes golden brown in color.
