Shahi Kofta


Ingredients for to make meat balls

1.Chicken finely minced - 1/2 kg
2.Ginger chopped - 1 tsp
3.Green chillies chopped - 3 no
4.Garam Masala - 1 tsp
5.Coriander leaves - 1/4 cup
6.Thick cashew paste - 3 tsp
7.Corn flour - 1/2 cup to dip the meat balls in it
8.Salt

Ingredients for the gravy

1.Onion chopped - 1 cup
2.Onion sliced - 2 no
3.Tomato -1 no medium
4.Green chillies - 3 no
5.Ginger chopped - 1 tsp
6.Ginger garlic paste - 1 tsp
7.Turmeric powder -1/2 tsp
8.Coriander powder - 1/2 tsp
9.Chilli powder - 1/2 tsp
10.Cinnamon - 1 stick
11.Cloves - 1
12.Cardamom - 1
13.Fennel seeds/sweet cumin/perum jeerakam - 1 tsp
14.Star aniseed /thakkolam -1/4 of 1 piece
15. Cashew nuts soaked in water - 50 gm
16.Fresh Cream - 1/2 cup
17.Oil - 2 tsp
18.Ghee - 2tsp


Preparation for the meat ball

1.Mix the finely minced boneless chicken with ginger ,green chillies,garam masala,coriander leaves chopped,cashew paste,and salt.

2.And make small meat balls with it .And just roll it with corn flour so that the meat balls do not get break.We need only the dust of corn flour do not add water to it.

3.And fry it in oil till the chicken be cooked.

4.Now in another pan heat 2 tsp of oil and add the cloves,cinnamon,cardamom ,aniseed,fennel seed to it then add the ginger garlic paste to it and saute well.

5.Now add chilli powder,coriander powder to it and add the sliced onion to it and saute it.Then add the tomato it and saute well.

6.When it becomes cool grind it with cashew nuts.

7.Then in another pan heat the ghee and saute the chopped ginger and green chilli then the chopped onions to it.Till it becomes light brown color.Add turmeric powder to it then add the grounded gravy to it also add the water needed to it and salt .

8.When it starts to boil add the kofta balls to it and boil it for 5 minutes and garnish it with chopped coriander leaves.
