Makai Jajaria -Rajasthani sweet

It is a famous sweet dish from Rajasthan made from sweet corns ,which is cultivated popularly in Rajasthan.You may better use yellow sweet corns so that it will give nice yellow color to your desert.

Ingredients needed to make Makai Jajaria

1.Sweet corns -1 cup
2.Milk - 1 cup
3.Sugar-1/2 cup
4.Cardamom powder- 1/4 tsp
5.Ghee - 1 tsp

How to make Makai Jajaria

1.Heat the ghee in a pressure cooker add the sweet corns to it and stir it then add the milk to it and cook the corns for two whistle .

2.Add the sugar to it and boil it in slow flame.

3.When it becomes slightly thick turn off the fire and add the cardamom powder to it.

Mava Kachori -Rajasthani sweet recipe

On my last visit to jaipur i happen to eat this mava kachori.Very rich with dryfruits and khoya inside it.Deep fried coated with sugar syrup.


Ingredients needed to make mava kachori
1.Maida -1 cup
2.ghee - 2 tsp
3.Salt as needed
4.Warm water to knead the dough
5.Oil

For the filling

1.Grated mava\khoya - 1/2 cup
2.Badam - 2 tsp
3.Pistachios- 2 tsp
4.Cardamom-1/2 tsp
5.Raisins - 2 tsp
6.Sugar- 1tsp
7.Saffron-2 strands
8.Ghee - 2 tsp

For Sugar syrup

1.Sugar - 1 cup
2.Water - 1/2 cup
3.Saffron - 2 strands

How to make the Mava Kachori

1.Mix the maida ,salt and ghee in a bowl and knead to soft dough by using warm water.

2.Allow dough to rest and divide it to small balls.

3.Now in another pan dissolve the sugar in water and bring it to boil add the saffron strands.
.4.In another pan heat the ghee and fry the mava till golden color,the add sugar,and all the nuts to it .Now the filling is ready.

5.Roll each small balls in to small circle and place the filling in the center.Now cover it with another circle and seal the ends using little water in your hands.

6.Deep fry the kachories and after drain out execss oil put the kachories in the sugar syrup .Drain it and keep it aside .Now the mava kachori is ready to be served......

Veg Momos

I found an article related to momos in metro manorama found interesting.We can prepare either veg or non veg momos.It has some special designs all over its sides .As we are not experts it is a little bit difficult for us.Its ingredients are simple and easily available.

Ingredients needed to make Momos

1.Maida -1/2 cup
2.Salt
3.oil -1 tsp

For the veg  filling

1.Cabbage -1/2 cup
2.Carrot -1/4 cup
3.Garlic -1/2 tsp
4.Spring onion -3 springs
5.Pepper powder - 1 tsp
6.Salt
7.Oil - 1 tsp

For the chutney

1.Tomato - 2 no
2.Red chilli whole - 5 to 6 no
3.Green chilli - 3 no
4.Ground nut -2 tsp
5.Salt

How to prepare the Momos

1. Mix flour, salt and oil  in a bowl and add water to make a smooth  dough.  Keep aside covered.
 
2.Heat the oil in a pan and add the chopped cabbage and carrot,garlic to it ,saute it for 3 minutes 

3.Now add the salt,pepper powder,spring onions to it .If you want you can add soya or tomato sauce to it.

4.Now make small balls out of the dough and make small puries,in circular shape.Be care full that it should be thin.

5.Now fill it with one spoon of filling and fold the sides using your nails .It is a tough design.

6.Now keep the momos in steamer for 5 mts.

7.Now the momos will be ready to be served

For the chutney

1.Boil the tomatoes as whole.Do not peel the skin.

2.Now grind the tomatoes,red chillies,green chillies,salt,and groundnut in a mixer .

Serve the momos with this chutney

plum cake recipe 2

 Ingredients needed to make plum Cake

1.Red grape wine - 75ml
2.Black raisins - 250 gms
3.Dry ginger powdered and soak in sugar syrup - 25 gm
4.Dried orange peel - 25 gms
5.Sugar - 25 gms
6.Dried Lemon peel - 1 no
7.Nutmeg powder - 1/2 tsp
8.Salt a pinch
9.Honey - 25 ml
10.Lemon juice - 2tsp

To make the batter of cake

11.Butter -150 gm
12.Egg -3 no
13.Maida/flour- 300 gm
14.Sugar-150 gm
15.Rum - 25 ml
16.Caramel syrup - 2 tsp
17 .Baking powder - 1 tsp

How to prepare the Plum Cake

1.In a heavy bottom pan when it become hot pour the red wine to it,and then add the 25 gm sugar to it.

2.Add a pinch of salt,lemon peel,dry ginger,peeled orange skin,lemon juice to it and bring it to boil.

3.Now add the raisins to it and cook it for another 5 mts.

4.Turn of the fire and add the honey to it and mix it well.Now the mix will be thick and keep it to cool.

5.Now add the nutmeg powder and rum to it and mix it well.

6.In another bowl take the 150 gm of sugar ,and butter and beat it well with a beater.

7.Now add the egg one by one to it and mix it well.add the fruit mix it and mix slowly.

8.Now add the maida slowly and fold carefully with a spoon.

9.Now the batter is ready pour this batter in a dusted cake pan and bake it in 150 degree for 1 hour.

10.When it become cool cut the cake into pieces.

Plum cake for christmas

Hey happy christmas to all my readers.From today onwards on considering this festive season i will blog only about cakes till christmas.So this is cake number one plumcake.

Ingredients needed to make plum cakes

1.Dry friuts- 1/2 cup
2.Rum - 2 table spoon
3.Butter - 125 gms
4. Powdered Sugar -125 gms
5.Maida - 125 gms
6.Egg - 2 no
7.Baking powder - 1/2 tsp
8.Vanilla essence - 1 tsp
9.Caramel syrup - 1/2 cup

How to make plum Cake

1.Soak the dryfruits including broken nuts,dates,raisins,apricots in brandy for one week.

2.In a bowl beat the butter and powdered sugar till it become pluffy.

3.Add the egg to this mixture and beat it again ,add one egg at a time.Now add the caramel syrup to it and mix it well using a wooden spatula.

4.Now in another bowl mix the maida with baking powder.Add the dry fruits to this.Mix it well by using your hand.

5.Now add this maida mix to the beaten butter ,sugar.Add the vanilla essence to it .

6. Now pour the mixture to a dusted baking try and bake it in the oven for 1 hour at 180 degree .

7.Now the yummy plum cake is ready to be served.......

Bundi payas - A Rajastani sweet

Again Deepawali visited ,crackers,new dress,sweets ,shopping,shopping ,shopping ........Wow what a colorful festival which brings only happiness.I wish a very happy deepawali to all.Today i am going to wright a rajashani sweet recipe which is similar to kheer.Few ingredients are needed to make the Bundi Payas,preparation time is vey low and easy to make.

Ingredients needed to make the Bundi Payas

1.Sweet Bundi- 1 cup
2.Milk - 1 ltr
3.Bay leaves- 2 no
4.Sugar - 1/4 cup
5.Cardamom powder- 1 tsp
6.Chopped pistachio- 1 tsp
7.Saffron - a few strands
8.Rose water - 1/2 tsp

How to make Bundi Payas

1.We can buy the readymade sweet bundi for cooking.
2.Boil the milk in a pan with bay leaves till it become reduced in volume and remove the bayleaves from milk.
3.Add sugar to the milk and mix it well.
4.Remove the milk from heat and now add the rose water,pistachios,saffron to it and mix it well.
5.Now keep the Bundi Payas cool and serve.......

Amle Ka Murabba -Rajasthani recipe

This is my 6 th Rajastani recipe.As you people know that these days i am searching through Rajasthani flavors .Again my classes were restarted but i think i will get one week Onam holidays.Amle means Gooseberry ,Amle ka murabba means it is gooseberry preserved in Sugar syrup.Its ingredients were few,easy to make,and can be preserved for long time.Simply it is a winter preservative.When a lots of gooseberries are available in the market you can make use of this recipe.

Ingredients needed to make Amle Ka Murabba 

1.Gooseberry -1 kg
2.Sugar-11/2 kg
3.Saffron-few strand
4.Black cardamom powder - 1 ts
5.Water -1 1/2ltr


How to prepare the Amle Ka Murabba

1.In a wide bottom pan place the washed gooseberries with water and bring it to boil for atleast 15 mts till the gooseberries become tender.Better cover the gooseberry with a lid this will make the cooking easier.

2.Now drain the goosberry and allow it to cool.

3. Now for making the sugar syrup in another pan heat the sugar with one and half ltrs of water and bring it to one thread consistency.

4.Now add the cooked amla ,cardamom powder and saffron to it and cook it another 5 mts.

5Now allow it to cool and store it in air tight container ....

Aam aur Chane Ka achar - Rajastani recipe

Aam aur chane ka achar this my 5th rajashtani recipe.All over India during summer season magoes are available in plenty. The major difference beween this pickle and our kerala style pickle is that we do not use this kabuli chana for pickle.And the Rajastani people use the mustard seed oil for thepickle instead of that we are using the gingerly oil.

Ingredients needed to make Aam Aur Chane Ka Achar

1.Raw mango grated - 11/2 cup
2.Kabuli chana (chickpeas)- 1/4 cup
3.Red chilli powder- 2 tsp
4.Turmeric powder - 1 tsp
5.Fenugreek seed powder - 1 tsp
6.Fenugreek seeds - 1 tsp
7.Kalonji (nigella )- 1 tsp
8.Asafoetida- 1/4 tsp
9.Fennel seeds-1 tsp
10.Red chillies - 5 no
11.Salt
12.Mustard oil- 1 1/2 cup

How to make the Aam Aur Chane Ka Achar

1. Peel the skin of the raw mango and grate it.Now combine the grated mango with Salt and turmeric powder and leave it for 30 mts.Squeeze all the water out of it and keep it aside.

2.Now soak the  fenugreek seed and kabuli chana overnight in the mago water .Refregerate the grated mango

3.Slightly dry roast fennel,nigella, whole red chillies and fenugreek seeds to remove the moisture .Combine the fenugreek seed powder, fennel seeds, asafoetida, nigella seeds, whole red chillies, chilli powder and soaked Kabuli chana mixture along with the grated mango. Mix well.
4. Heat the mustard oil till smoking point.let it cool down completely then add in the mango mixture.The pickle is ready to eat after 6 to 7 days.Store it a cool dry place for upto one year

Gatte Ki Sabzi -Rajastan recipe

This is my fourth Rajastani recipe,Gatte Ki sabzi.Gatte means the small balls made out of basen.In Kerala we use the basen only for the evening snack item .But for Rajastan i have noticed that they are using this basen even for their breakfast.

Ingredients needed to make Gatte

1.Basen- 1 cup
2.Red chilli powder - 1 tsp
3.Turmeric powder -1/2 tsp
4.Salt
5.Ajwain- 1 tsp
6.Oil - 4 tsp
7.Coriander powder- 1 tsp

Ingredients needed to make the Gravy


1.Curd - 1/2 cup
2.Onion- 1 no
3.Tomato - 1 no
4.Ginger and garlic paste - 1 tsp
5.Red chilli powder - 2 tsp
6.Coriander powder - 1 tsp
7.Garam Masala - 1/2 tsp
8.Mustard Seeds - 1 tsp
9.Cumin Seeds - 1 tsp
10.Salt - as per taste
11.Oil - 2 tsp

How to prepare the Gatte


1.Mix Basen with red chilli powder,turmeric powder,coriander powder,salt,ajwain and make fine dough out of it either by adding curd or water.

2.Take a small ball of the dough and roll it into 1/2 inch thick cylinderical shape (about 6 inch ).Now take a pot and boil water in it. Take enough water to put all the above made rolled gatte in it.

3.Cook it for 15 mts when the gatte are cooked well remove it from the water keep it aside.When the gatte get cooled slice the gatte in to 1/2 inch pieces.

How to prepare the gravy


1.Heat a kadai and pour the oil to it,now add the mustard seeds,cumin seeds to it and wait for it to splutter.

2.Add the ginger garlic paste and saute it well,then add the sliced onions to it.When it become fried then add the tomatoes to it and saute it well.Cook it until the tomatoes are mashed well.

3.Beat the curd well in another bowl, now add this beaten curd to the gravy in low flame and mix well. then add turmeric powder, red chilli powder, corriander powder, cumin powder, garam masala(optional) to the gravy and mix well. let the mix keep bubbling in low flame for about 5-10 minutes, till you see the oil on the sides of the gravy.

4.Add the gatte to this gravy and again boil it for 5 more mts.

5.You can garnish the gatte with chopped coriander leaves....

Coffee brewing is an art

The recent edition of WomansEra magazine contained a good feature.A person who always love to search and note any thing regarding with food will love to read the feature.Its heading is"Brewing is an art".
which classified the coffee into two categories.

1.Filter Coffee
2.Espresso Coffee

Filter Coffee 

There are different method of obtaining the real flavour of Coffee.And in India filter coffee literally means the southindian filter coffee.

Procedures

  • Add 20 gm of fresh roasted coffee powder to the brew basket.
  • Pour 200 ml of freshly boiled water over the coffee powder and allow the brew basket closed.
  • Allow it to brew for 5 to 6 mts.
  • Pour the brew into a cup .
  • Add fresh hot milk and sugar to the brew.
Espresso Coffee
 







This is a liquid coffee extracted very fast under both high pressure and temperature.A 30 ml of espresso coffee can be extracted from about 7 to 10 gm of coffee powder within 30 seconds.

The extraction takes very little time.The espresso coffee has to be consumed immediately after brewing to get that taste .Coffee connoisseurs consume espresso directly without mixing it with sugar or milk
.
Espresso coffee blend itself excellently to creating a large number of espresso based coffee preparations such as Cafe Latte,Cafe Mocha and Cappuccino,to name a few.

Daal Baati Churma -Rajastani recipe

This is my third Rajastani recipe,and this is the most famous recipe.Baati means round balls made up of wheat flour(atta) which was baked over fire wood.If you have no firewood is there you can bake it in the oven.But traditional Rajastani recipe follows the firewood method.Baatis are served with daal and churma with ghee.Panchamel dal is rajastani delicacy where five daals where cooked together with spices.

Ingredients needed to make Baati

1.Wheat flour - 1cup
2.Semolina-1/4 cup
3.Basen-1/4 cup
4.Salt
5.Ghee-5 tsp
6.Milk - 5 tsp

Ingredients needed to make the Panchamel Daal

1. Bengal gram(chana dal)-1/4 cup
2.Pegin pea(Tuvar daal/Arhar dal)-1/4 cup
3.Split Green gram(Moong daal)-1/4 cup
4.Whole red lentils(masoor dal)-1/4 cup
5.Split black gram (urad dal)-1/4 cup
6.Chilli powder - 3 tsp
7.Coriander powder - 1 tsp
8.Turmeric powder - 1/4 tsp
9.Garam masala powder - 1/2 tsp
10.Cloves - 3 no
11.Cumin seeds -1 tsp
12.Asafoetida- a pinch
13.Ginger garlic paste - 1 tsp
14.Ghee- 3 tsp
15.Salt as needed



How to make Baati

1.Knead all the ingredients well except the ghee .You can add water to make dough or use the milk for the dough.

2.Keep the dough for 15 mts and now divide the dough in to lemon sized balls.Flatten the rounds lightly using your thumb to make an indentation in the centre of the baati.

3. Heat the firewood or your oven and put the baatis on the grill of your oven or spred it over a sheet on the firewood . Cook them on a medium heat for 20 to 25 minutes. Cooking the baatis over a medium flame will ensure that the baatis are cooked on the insides also.When the balls get a light golden color it will be ready to served.Brush a little ghee on the upper side of the baati.

How to make Panchamel Daal

1. Wash the dals well and soak the dal for atleast 2 hours that will help the cooking of dal.Now pressure cook the dal for 2 to 3 whistles or till the dal is cooked.

2.Heat the ghee in a pan and add the cloves, bay leaves, cumin seeds,  and asafoetida. When the cumin seeds crackle, add the ginger garlic paste and saute it well.

3.Add red chilli powder,coriander powder,turmeric powder ,garam masala powder to it.

4.Now add the cooked dal and salt to it.Now cook for another 5 mts and if water is needed then add water to it.

5.Garnish it with chopped coriander leaves......

Rajastani Lasun Ki Chutney

Lasun means garlic and this is the very simple recipe i ever found on the rajastani dishes.The recipe is simple and it needs only few ingredients.


Ingredients need to make Lassun Ki Chutney

1.Garlic- 15 cloves
2.Red Chillies - 10 no
3.Tomato- 1 small
4.Amchur powder - 1/2 tsp
5.Salt
6.Oil -2 tsp

How to make Lassun Ki Chutney

1.In a mixer blend the red chillies,garlic,tomatoes ,amchur powder and salt.

2.Now heat the oil in a pan and saute the paste for 5 to 7 mts.

3.Lasun ki chutney is ready to be served.........

ALOO PETHE KA SAAG -Rajastani recipe

As my computer exams were over today and tomorrow i am free.I spend a lot of time in watching TV.On watching my favourite masterchef Junior season show in star plus i noticed DEVENDAR from Rajastan .It reminded me the smell and beauty of Rajastan.So i decided to search through Rajastani recipies.From today onwards for two days in and out i will be a complete Rajastani.Get ready for the first recipe.....Aloo Pethe Ka Saag.Pethe means the red pumpkin.It is vegetable dry dish which can be served with Puri and Parathas.....
Ingredients needed for Aloo Pethe Ka Saag

1.Potatoes-1 cup
2.Red pumpkin-1 cup
3.Cloves- 2 no
4.Cinnamon- 1 stick
5.Cardamom- 2 no
6.Bay leaves- 2 no
7.Salt
8.Ghee
9.Curd - 1 cup
10.Ghee -2 tsp
11.Kalonji(Onion Seeds)-1 tsp
12.Mustard- 1/2 tsp
13.Cumin(jeera)-1 tsp
14.Asafoetida(hing)- a pinch
15.Chilli powder -2 tsp
16.Coriander powder-1 tsp
17.Turmeric powder-1/2 tsp
18.Amchur powder-1 tsp
19.Tomatoes - 2 no

How to prepare ALOO PETHE KA SAAG

1.Heat the ghee in a pan and now add the mustard seeds,wait for it to pop,add cinnamon,cardamom,jeera,cloves,bay leaves,kalonji seeds.

2.Now add tomatoes to it and cook it well.

3.Add the square pieced potatoes and pumpkin to it .Add salt as needed and cook it well by covering it with a lid in slow flame.If needed you can add water to cook it.

4.When it is cooked well add the red chilli powder,coriander powder,turmeric powder ,asafoetida,amchur powder to it.

5.Now add the beaten curd to it and mix it well with the vegetables.

6.You can add chopped corianderleaves for garnishing......
