Honey chicken

Ingredients For Honey Chicken

1.Chicken - 1 kg
2.Tomato puree - 1/2 cup
3.Lemon juice - 2 tsp
4.Soya sauce - 2 table spoon
5.Honey - 1/4 cup
6.Ginger chopped - 1 tsp
7.Pepper powder - 1 tsp
8.Salt

How to make Honey Chicken

1.Mix the chicken pieces with other ingredients and keep it in fridge for 12 hours.

2.And then cook it covered till the chicken become cooked well.

3.When the gravy become thick turn off the fire and serve it with roti.

Methi Chicken - A North Indian Recipe


As the name indicates the chicken which is cooked in methi leaves(Kasoori Methi) or Fenugreek leaves is known as Methi Chicken .

Ingredients For Methi Chicken

1.Chicken - 1 kg
2.Ginger garlic paste - 2 tsp
3.Chopped onions - 3 no
4.Chopped tomatoes - 3no
5.Red chilly powder - 1tsp
6.Turmeric powder-1/2 tsp
7.Coriander powder-1 tsp
8.Green chillies - 4
9.Dry fenugreek leaves (Kasoori Methi) - 2 tsp
10.Cumin seeds - 1/2 tsp
11.Yogurt (curd) - 2 tsp
12.Salt
13.Garam masala powder - 1tsp
14.Chopped coriander leaves
15.Oil - 4tsp

How to make Methi Chicken

1.Heat the oil in a heavy bottom vessel and then add the cumin seeds to it and when it begins to pop out add the onions ,green chilly to it and saute it well.

2.When the onion turns golden in colour add ginger garlic paste to it .Then add chopped tomatoes to it and saute it again.

3.Then add red chilly powder ,turmeric powder , salt ,and coriander powder to it and mix it well.

4.Add 2 tsp curd to it and saute it really well.

5.Add kasori Methi leaves and chicken and mix it well.Cook the chicken covered till the chicken become coated with the gravy .

6.When the chicken become cooked add garam masala powder and chopped coriander leaves to it .

Serve it hot with rice or roti...............

Chicken Chettinad Recipe


Ingredients For Chicken Chettinad

1.Chicken - 1 kg
2.Coconut grated - 1/2 cup
3.Khus khus or Poppy seed - 2 tsp
4.Cinnamon - 1 stick
5.Cloves - 3
6.Cardamom - 2
7.Coriander seeds - 1 tsp
8.Cumin seeds - 1/2 tsp
9.Fennel seeds - 1 tsp
10.Star anise - 1
11.Whole red chillies - 8
12.Turmeric powder - 1/2 tsp
13.Red chilly powder - 1 tsp
14.Onion chopped - 1 no
15.Tomatoes chopped - 3
16.Lemon juice - 1 tsp
17.Coriander leaves
18.Salt
19.Curry leaves
20.Oil - 1/2 cup
21.Ginger paste - 1 tsp
22.Garlic paste - 1 tsp

How to make Chicken Chettinad

1.Clean the chicken and cut it into small pieces.

2.Dry roast the red chillies,coriander seeds,fennel seeds,poppy seeds,cumin seeds,grated coconut,star anise,cinnamon,cardamom,and cloves in tsp oil and then grind it in to fine paste along with ginger and garlic.

3.Heat the rest of oil in a heavy bottom wok and then fry the onions till it becomes golden in color.Then add the tomatoes to it and saute it again.

4.Then add curry leaves and the grounded paste to it and saute it well.

5.Add red chilli powder ,turmeric powder and salt to it and mix it well.Add chicken pieces to it and mix it well with the masala and cook it for 5 mts.

6.Add 2cups of water and cook it again and when the chicken is almost done add the lemon juice to it and garnish it with chopped coriander leaves.


Serve it hot with rice or roti ...............

Spicy grilled chicken North Indian recipe


Ingredients For grilled chicken


1.Chicken cut in medium pieces - 1 kg
2.Red chilli powder - 1 1/2 tsp
3.Garam masala powder - 1 1/2 tsp
4.Pepper powder - 1 tsp
5.Ginger and garlic paste - 1 1/2 tsp
6.Beaten yogurt - 1 cup
7.Salt
8.Lemon juice - 1 tsp
9.Orange red food color - 1 pinch (optional)


Preparation


1.Cut the chicken in to medium size pieces.Marinate the chicken pieces with the whole ingredients.

2.And refrigerate it for about 4 to 6 hours.

3.Preheat your oven to 200 degree .Place the chicken in the skewers and using a brush apply little oil on the top of the chicken pieces.

4.Place the skewers on the grill rack in oven with a tray underneath to catch drippings.

5.When the chicken get browned on all sides ,remove from the skewers and place it in a serving plate.

Kentucky Fried Chicken Or KFC Chicken recipe


We all love to eat the KFC chicken,isn't it so yummy?The Kentucky Fried Chicken was found by Colonel Sanders,and even after his death he is the brand ambassador of KFC.I do not know whether this recipe will bring perfect Kentucky fried chicken or not.But i got this recipe from www.chickenrecipesecret.com.

Ingredients


1.White flour - 2 cups
2.Garlic Salt - 2 table spoon
3.Paprika - 4 table spoon
4.Salt
5.Thyme - 1/2 table spoon
6.Basil - 1/2 table spoon
7.Oregano - 1/3 table spoon
8.Celery Salt - 1 table spoon
9.Black pepper - 1 table spoon
10.Dry Mustard - 1 table spoon
11.Ground ginger - 1 table spoon
12.MSG - 2 table spoon
13.Egg -2
14.Bread Crumbs -1 cup
15.Chicken - 50 0 gm


  • Garlic salt is flavored salt,and it is a mixture of dried ground garlic and table salt with an anti caking agent.
  • Oregano is a culinary herb used as dried to add flavor to the dish.
  • Paprika is a spice made up from grinding of dried fruits of Capsicum .Or in other words paprika refers to bell pepper.
  • Thyme is a medicinal plant used for culinary purpose.
  • Basil is a herb which is used as fresh or dried in recipes.
  • Celery salt is prepared by mixing grounded seeds of celery with table salt.
  • Dry mustard seeds have no aroma but it is really very hot and releases great aroma.
  • Mono sodium glutamate is known as MSG.Al so known as Aginomotto which add nice flavor to the dish.
  • Preparation
1.Mix all the ingredients in a bowl other than that of the egg and bread crumbs.

2.Beat the egg in another bowl really well.

3.Take boneless chicken pieces and dip it in the beaten egg and then roll it in the bread crumbs.

4.Roll the chicken pieces again in the spicy mixture.

5.Preheat the oven at 350 degree ,for 5 mts and then keep the marinated chicken in a pan and the cover it with a foil

6.Bake it for 30 mts ,and then bask it with oil and then serve it.

Chicken Ularthiyath


Ingredients

For marination

1.Chicken - 1 1/2 kg
5.Turmeric powder -1/2
6.Red chilli powder - 4 tsp
7.Coriander powder -2 tsp
8.Garam masala powder - 1 1/2 tsp
9.Salt

For the masala

2.Coconut grated - 1/2 cup
3.Onion - 5 no
4.Ginger - 5 medium piece
5.Garlic cloves - 20 no
6.Pepper corns - 1 1/2 tsp
7.Red chilli powder - 2 tsp
8.Turmeric powder - 1/2 tsp
9.Coriander powder - 2 tsp
10.Garam masala powder - 1 tsp
11.Fennel seed/Perum jeerakam - 1/2 tsp
12.Cinnamon stick - 2 big piece
13.Cloves - 5 no
14.Salt

Other ingredients

15.Coconut oil - 5 to 6 tsp
16.Curry leaves

Preparation

1.Marinate the chicken with 4tsp red chilli powder,1/2 tsp turmeric powder,2 tsp coriander powder,1 1/2 tsp garam masala powder and salt.Keep it for 30 mts.

2.Crush the ingredients under the heading ingredients for the masala in a mixer.Just crush it no need to make paste from it .

3.Mix the marinated chicken with the crushed masala.

4.Heat 2 tsp oil in a pan add curry leaves to it then add the chicken with masala to it.Cover it with lid and cook the chicken in simmer.Check it between 5 mts and again cook it.

5.It is a time consuming procedure it will took nearly one hour for its preparation.

6.Stir it in between and again add 2 tsp oil and cook it till it gets a brown color.Till all the masala become brown and crispy.

Garlic Chicken - Simple Method


This reipe that i got from Asianet Cookery show ,i think this is the easiest way of making garlic chicken .As this is Ramzan time there will be always chicken in our home so lets try this .

Ingredients


1.Chicken boneless - 250 gm
2.Garlic chopped - 12 cloves
3.Onion in cube pieces - 3 table spoon
4.Capsicum in cube pieces - 2 table spoon
5.Celery - 2 table spoon
5.Butter - 3 table spoon
6.Chilli sauce - 2 table spoon
7.Soya sauce - 1 table spoon
8.Tomato sauce - 3 table spoon
9.Pepper powder - 1 table spoon
10.Sugar - 1/4 tsp
11.Corn flour - 1 table spoon
12.Refined oil
13.Salt


Preparation

1.Cook the chicken with 1 table spoon butter ,little pepper powder,salt , and 1/4 cup of water in a cooker.Since we need the stock for the rest of the cooking .That is why i added 1/4 cup of water.

2.Melt 2 table spoon butter in a pan and saute the garlic in it then add the onions to it.When it is done add all the three sauces to it.Then add the pepper powder to it .Then add the capsicum to it.If you use colored capsicum it will add colored to your dish.

3.Then add the cooked chicken pieces to it and saute it well.Only add the chicken pieces to it.

4.Mix the corn flour in the chicken stock and add this to the cooked chicken.

5.In the last turn off the fire and add the sugar and celery to it.

Serve it hot with Nan and Roti......

Nilgiri Chicken - Lakshmi nair recipe


This is a green colored chicken curry .So that it is called the nilgiri chicken.The Nilgiri which is often referred to as the blue mountain in the south .Due its color it's color this dish is also called as the Nilgiri Chicken.

Ingredients


1.Chicken - 20 pieces
2.Oil -1 1/2 table spoon
3.Salt
4.Cashew nuts - 50 gm (optional)

Onion Masala

1. Onion - 3 no
2.Ginger - 1 1/2 table spoon
3.Garlic - 1 1/2 table spoon
4.Coriander powder - 1 1/2 table spoon
5.Chilli powder - 1/2 tsp
6.Green chillies - 2
7.Water - 1 1/2 cup

Green masala

1.Coriander leaves - 200 gm
2.Pudina leaves/Mint leaves - 100 gm
3.Curry leaves
4.Ginger - 1 big piece
5.Garlic - 8 to 10
6.Green chillies - 10
7.Cinnamon - 2 piece
8.Cardamom - 4
9.Cloves -4
10.Fennel seeds/perum jeerakam - 1 1/2 tsp
11.Pepper - 1 tsp

Preparation for onion gravy

1. We are cooking the onions in water,so in a heavy bottom pan add onion,green chillies,ginger,garlic,coriander powder,red chilli powder,salt,water and cook it till all the ingredients become cooked well.Then grind it in to a fine paste.

2.Then add the chicken pieces in to this grounded masala and cook the chicken in it.


Preparation of the green gravy



1.Ground the coriander leaves,mint leaves,green chillies,ginger,garlic,cinnamon,cardamom,fennel seeds,cloves,pepper ,curry leaves in a blender.

2.In another pan heat 1 1/2 oil and add the green masala paste to it and saute it well.Add curry leaves to it and cook the green masala paste really well till its raw smell gone.

3.When it is done add the cooked chicken to it and mix it well .And cook it for another 10 mts.

4.Add the cashew paste to it and cook it for another 5 mts.Now it is ready to be served...

Shahi Kofta


Ingredients for to make meat balls

1.Chicken finely minced - 1/2 kg
2.Ginger chopped - 1 tsp
3.Green chillies chopped - 3 no
4.Garam Masala - 1 tsp
5.Coriander leaves - 1/4 cup
6.Thick cashew paste - 3 tsp
7.Corn flour - 1/2 cup to dip the meat balls in it
8.Salt

Ingredients for the gravy

1.Onion chopped - 1 cup
2.Onion sliced - 2 no
3.Tomato -1 no medium
4.Green chillies - 3 no
5.Ginger chopped - 1 tsp
6.Ginger garlic paste - 1 tsp
7.Turmeric powder -1/2 tsp
8.Coriander powder - 1/2 tsp
9.Chilli powder - 1/2 tsp
10.Cinnamon - 1 stick
11.Cloves - 1
12.Cardamom - 1
13.Fennel seeds/sweet cumin/perum jeerakam - 1 tsp
14.Star aniseed /thakkolam -1/4 of 1 piece
15. Cashew nuts soaked in water - 50 gm
16.Fresh Cream - 1/2 cup
17.Oil - 2 tsp
18.Ghee - 2tsp


Preparation for the meat ball

1.Mix the finely minced boneless chicken with ginger ,green chillies,garam masala,coriander leaves chopped,cashew paste,and salt.

2.And make small meat balls with it .And just roll it with corn flour so that the meat balls do not get break.We need only the dust of corn flour do not add water to it.

3.And fry it in oil till the chicken be cooked.

4.Now in another pan heat 2 tsp of oil and add the cloves,cinnamon,cardamom ,aniseed,fennel seed to it then add the ginger garlic paste to it and saute well.

5.Now add chilli powder,coriander powder to it and add the sliced onion to it and saute it.Then add the tomato it and saute well.

6.When it becomes cool grind it with cashew nuts.

7.Then in another pan heat the ghee and saute the chopped ginger and green chilli then the chopped onions to it.Till it becomes light brown color.Add turmeric powder to it then add the grounded gravy to it also add the water needed to it and salt .

8.When it starts to boil add the kofta balls to it and boil it for 5 minutes and garnish it with chopped coriander leaves.
