Chettinadu Paal Paniyaram with Lakshmi Nair

Ingredients needed to make Paal Paniyaram

1.Rice - 1 cup
2.Urad daal - 1 cup
3.Salt
4.Coconut milk-1/2 cup
5.Sugar-1/4 cup
6.Cardamom powder -1/4 tsp
7.Oil as needed to fry the balls

How to prepare the Paal Paniyaram

1.Just like how we prepare dosa mix, soak the rice and urad daal for 6 hrs.

2.Now grind it to fine paste without adding much water ,so that we get a thick batter.

3.Now heat the oil in a kadai and pour the small pinches of batter to the kadai.The balls will pough up,so make sure to make small balls.

4.No need to fry them in golden color,it should slightly whitish in color.

5.In another ball mix the coconut milk,sugar and cardamom powder.

6.Now add the balls to this coconut milk and serve it.You can use cows milk instead for coconut milk.

karamani Sweet Sundal (Black eyed beans Sweet Sundal )-Navarathri special


Ingredients for Karamani Sweet Sundal


1.Karamani /Black eyed beans - 1 cup
2.Grated coconut - 1 cup
3.Powdered jaggery - 1/4 to 1/2 cup
4.Cardamom powder - 1/2 tsp
5.Ghee - 2 tsp

Method of Preparation to make Karamani Sweet Sundal


1.Dry fry the black eyed beans in a dry pan.Then cook it in a pressure cooker make sure that do not over cook the beans.And drain it out.

2.Heat the jaggery in a pan adding little water to it.When the jaggery become fully dissolves add the cooked beans to it.

3.Mix it well and then add the grated coconut to it ,add ghee and cardamom powder to it.

Serve either hot or cold..................

Vermicelli or Semiya Kesari


Ingredients

1. Roasted Vermicelli - 2 1/2 cup
2.Sugar - 1 1/2 cup
3.Hot water - 5 cup
4.Milk powder - 3 table spoon
5.Cardamom powder - 3/4 tsp
6.Ghee - 1/4 cup
7.Cashew nuts - 25 gm
8.Yellow color

Preparation

1.Heat 2 table spoon ghee in a pan and fry the cashew nuts in ghee and drain it out.

2.Then in the same pan add the vermicelly and 5 cups of water.Cook it till the vermicelly become cooked .Add a pinch of yellow food color to it and mix it well.

3.Then add the milk powder and sugar to it and mix it well Cook it for another 5 mts.Then add the rest of ghee to it also add the cardamom powder to it.Decorate it with cashew nuts.

4.Now the semiya kesari is ready to be served.............

Banana Fritters by Lakshmi nair

Banana Fritters

pan cake by using this




Ingredients


1.Banana -4 no
2.Powdered sugar - 4 to 5 table spoon
3.Corn flour - 4 table spoon
4.Cardamom powder - 1/4 tsp
5.Milk - 1/4 cup
6.Grated coconut - 1/4 cup

Preparation

1.Peel the skin of banana and mash it with your hand really well ,then add the milk ,powdered sugar ,cardamom powder to it.

2.Then add the corn flour according to the need of it.Also add the grated coconut to it and mix it well.

3.Then you can either fry it in oil by pour it by a spoon .Or just like pan cake you can fry it in a frying pan by adding little ghee on it.(just like small dosa)

4.Both can be done because both are easy.
