Sundried Tomato Risotto With Herb Salad




Risotto is an Italian dish in which the rice is cooked in any kind of stock.And the dish will be in creamy texture.The rice is first fried in butter ,which consist of garlic and onions.And in the case of sundried tomato risotto the the dried tomato is added in to it.Sundried tomatoes are prepared by drying the ripened tomatoes in sunshine and then it is preserved in olive oil along with rosemary, basil, dried paprika, and garlic.


And today when i was reading through the newspaper i happened to notice that Shazahn Padamsee's favourite dish is Sundried Tomato Risotto With Herb Salad.o with out wasting anymore time i just started typing it.You will enjoy it.And Shazanh also said that She loved the risotto because it is very simple and easy to make.


Ingredients

1.Risotto Rice - 50 gm
2.Veg Stock - 50 ml
3.Sundried Tomato - 10 gm
4.Cream - 15 ml
5.Parmesan Cheese - 20 gm
6.Mixed herbs - 2 gm
7.Salt
8.Olive oil - 15 ml
9.Pepper - 1 gm
10.Onions - 2 tsp
11.Garlic - 1 tsp


For Herb Salad


1.Baby Lettuce - 4 gm
2.Baby basil - 2 gm
3.Baby Sage - 2 gm
4.Dill leaves - 1 gm
5.Olive - 7 ml
6.Oregano - 1 gm
7.Salt
8.Pepper - 1 gm


For Garnish

1.Red Pepper Coullis - 3ml
2.Basil oil - 1 ml

Preparation

1.Saute the onions ,and garlic in the olive oil ,add the risotto rice and cook it.

2.Add the veg stock and cooks slowly .Then add the sundried tomato julienne.

3.Finish it with cream ,mix herb and parmesan cheese.Place the risotto in a plate .

4.Make the herb with vinagiri.And put the herb salad on the top of risotto.Garnish it with red pepper coulis,basil oil and balsamico reduction.

Parmesan cheese - It is an Italian extra hard cheese
