Vegetable Stew - Kerala Style


Ingredients

1.Potato - 3 cubed
2.Carrot- 2
3.Onion - 2 sliced
4.Curry leaves
5.Coconut milk thick- 1 cup
6.Coconut milk thin - 1 1/2 cup
7.Salt
8.Coconut oil - 1 tsp
9.Green chillies - 6 or 7
10.Garam masala powder - 1/2 tsp
11.Ginger and Garlic chopped - 1 tsp


Procedure

1.In a pressure cooker add the onions,potato,carrot,green chillies ,ginger ,garlic ,curry leaves and cook it with the thin coconut milk along with salt .Just 2 whistle is enough for it.

2.Then open the lid and add the thick coconut milk to it and bring to boil then put off the fire.To this add the 1 tsp oil and garam masala powder this will add a nice aroma to the curry.....
