Methi Baingan - Bengali Recipe

Methi leaves with eggplant ,it will be really interesting if you cook it.So here i am going to give the bengali version of Methi Baingan.

Ingredients For Methi Baingan

1.Baby Brinjals- 3 no
2.Methi leaves cleaned and washed - 1/2 bunch
3.Green chilli chopped -1
4.Onion chopped - 1 small
5.Ginger and garlic paste - 1/2 tsp
6.Tomato puree - 1/4 cup
7.Amchur powder - 1/4 tsp
8.Basen/Gram flour - 1/4 cup
9.Mustard seeds - 1/4 tsp
10.Curry leaves
11.Cumin powder - 1/4 tsp
12.Coriander powder - 1/4 tsp
13.Garam masala powder - 1/4 tsp
14.Turmeric powder - a pinch
15.Salt
16.Oil to deep fry
17.Red chilli powder - 1/2 tsp (optional)
18.Baking soda - a pinch

How to make the methi Baigan

1.Make slit on the brinjals by keeping the stem intact.Sprinkle little salt on it and keep it aside.

2.Add 2 tsp oil in a pan and then add the mustard seeds,curry leaves ,green chilli and onion to it and saute it well.

3.Then add the methi leaves to it and saute it again for another 7 mts .

4.Now add the ginger and garlic paste to it and saute it again.Then add coriander powder,red chilli powder and cumin powder to it and stir it.Add the tomato puree to it and fry it again.

5.Add salt,garam masala powder,turmeric powder and little water to it and cook it again for another 10 mts.And turn off the fire.

6.In another bowl mix the basen ,baking soda,salt ,amchur powder and little red chilly powder.Mix it with little water and make thick batter of it.

7.In another pan heat the oil for frying the eggplants.Now dip each brinjal in the batter and fry it in the oil.

8.Now add the fried eggplant to the gravy.......

Garnish it with coriander leaves and serve it with roti or rice.
