It is similar to our vendakaya uppery.But as it is Andra recipe there are some variations.
Ingredients
1.Bendakaya/okra/vendakaya - 250 gms
2.Chopped onion - 1
3.Turmeric powder - a pinch
4.Chilli powder - 1/2 tsp
5.Cumin powder - a pinch
For seasoning
1.Mustard seeds - 1/4 tsp
2.Oil - 1 tsp
3.Curry leaves
Preparation
1.Cut the bendakaya in to small pieces .Heat the oil in a pan and splutter the mustard seeds ,curry leaves.
2.Then to this add the chopped onions to it and when it becomes soft add the bendakaya to it .And saute it well then add salt,turmeric powder,chilli powder,cumin powder to it.Saute it well.
3.Don’t overcook the okra, they should retain that, slight crunchy texture. Now the bendaya fry is ready to be served.
Some people add the peanuts,urad dal etc to this according to your taste you can make variations.
