Irumban Puli Achar (Averrhoa Bilimbi Pickle) or ilumbikka pickle


Ingredients


1.Irumban puli cut in to round pieces - 2 cup
2.Salt
3.Ginger chopped - 1 1/2 tsp
4.Garlic chopped - 1 tsp
5.Red chilly powder - 3 tsp
6.Fenugreek powder/uluva powder - 1 tsp
7.Asafoetida /Kayam powder - 1 tsp
8.Mustard seeds - 1 tsp
9.Curry leaves
10.Green chillies - 6 no
11.Coconut oil - 2 tsp

Preparation

1.Mix the irumban puli with salt and keep it aside.

2.Heat the oil in a pan and splutter the mustard seeds ,then add ginger ,garlic ,green chillies and curry leaves to it.

3.Add red chilly powder,kayam powder,and uluva powder to it.Then turn off the fire and add irumban puli to it .Mix it well and when it becomes cool keep it in an air tight container.

Adamanga Achar /Adamanga Pickle


Ingredients

1.Dried adamango slices - 1 cup
2.Mustard seeds - 1 tsp
3.Red chilli powder - 1 tsp
4.Fenugreek powder - 1/4 tsp
5.Asafoetida powder/Kayam - 1/4 tsp
6.Gingerly oil /Nallenna - 1/2 cup
7.Curry leaves

Preparation

1.Soak the dried mango slices in water for 1 hour.Heat the oil in a pan and splutter the mustard seeds and add curry leaves to it.

2.Add the mangoes to the oil then add the red chilli powder,fenugreek powder,asafoetida powder to it and mix it well.Then turn off the fire.

Because of it dry taste it is different from all the other kind of achar.

White Lemon Pickle (Vella Naranga Achar)


Ingredients

1.Lemon - 1/2 kg
2.Green Chillies - 10 or kanthari mulak - 15 - 20
3.Garlic - 20 cloves
4.Ginger chopped - 2 tsp
5.Mustard seeds - 1/2 tsp
6.Sesame oil - 2 tsp
7.Asafoetida powder - 1/2 tsp
8.Salt
9.Curry leaves

Preparation

1.Steam the oil in a steamer for about 10 mts and when it becomes cool pat dry it and cut it in to 4 pieces.

2.Heat the sesame oil in a pan and splutter the mustard seeds and add the curry leaves ,ginger ,garlic,green chillies to it and saute it for 3 minutes.

3.Add the lemon pieces,salt to it also add the asafoetida powder to it and mix well.

4.keep it in air tight jar for 2 week till all its flavours to get set....

All kinds of pickles

There are various kinds of pickles, most common of them being Mango and Lime.
Pickle signifies something which is hot, chilly hot but there are also sweet pickles.Pickle is not limited to Mango and Lime there is pickle made from Fish, Prawns, Beef and there is also Brinjal, carrot, Mixed vegetables and in andhra there is pickle from gingger, tomato and various others.
Mango pickle is of various kinds it would be difficult to say the exact count of the different types of it,it ranges from whole mango which may be medium sized or small as in Tender mango pickle and it may be of a different taste they are just salted and it does not taste hot (chilly hot). then there is mango pickle with are in big pieces with hard core of the see along with the piece and then there is pieces which are small and has nothing to spit out, then there is mince of mango pickle.
