Khasata Kachori




Ingredients

For the dough

1.Maida/All purpose flour - 1 cup

2.Chilled water

3.Oil - 2 tsp
4.Salt as needed


For the filling


1.Yellow Moong Dal - 1/4 cup

2.Cumin seed powder - 1 tsp

3.Coriander powder - 1 tsp

4.Green chillies - 2

5.Red chilli powder - 1/2 tsp

6.Hing/Asafotida - a pinch

7.Amtoore/Mango powder -1/2 tsp

8.Ginger paste - 1/2 tsp

9.Salt

10.Oil to fry the Kachori



Preparation


1.With the flour make a smooth dough out of it and keep it for 20 mts.


2.Grind the moong dal with green chillies.


3.Add 2 tsp oil to frying pan and when it becomes hot add the asafotida,red chilli powder to it .Then add the grounded moong dal with chillies,ginger paste,Amtoore powder,coriander powder,Cumin seed powder to it and mix it well.


4.Cook it in low flame for 10 mts.If needed add little water to it and cook it.But we do not need any water for the filling,we need it in dry form.


5.Then divide the dough in to 12 equal portions.Fill one tsp of filling in each ball.


6.Then carefully close the edges of the ball and press it again with your palm to make small round shape.


7.And deep fry it in the oil to get both side golden color.
Serve it with green chutney................

How to make the puri for pani puri and its filling





Ingredients

For the puri

1.Maida /All purpose flour - 1/4 cup
2.Suji rava /Semolina- 3/4 cup
3.Water
4.Salt

For the fillings

You can use black chana ,potato,tuvar dal,kabuli chana ,for the filling .Depending on the region it will be different.

1.Potato - 2
2.Kabuli chana /chickpeas -1/4 cup
3.Chilli powder-3/4 tsp
4.Salt


Preparation

For the puri


1.Combine the semolina,maida and salt in a bowl.Add water as needed to make firm dough. Knead the dough until it is soft and smooth.

2. Cover the dough with a damp cloth for about ten minutes.

3.Spread a fine cloth on the floor where you are going to make the puri.Because you are going to place the puri on the cloth.And make sure to cover it with another cloth.

4.Now divide the dough in to almost 55 - 60 balls.

5.Start rolling it to make small puris.If you want to get the same shape to each puri you can use any circular thing to cut it in to small round.Like the top of a jar .....etc

6.When you start to roll place each puri on the cloth and cover it.Put one puri in the oil and press lightly. When it puffs turn over and put another puri in the oil. Keep adding six to eight puris at a time. Fry the puris until they are golden-brown all around by turning a few times.

To make the filling

1.Cook the potato,chick peas ,with salt and chilli powder .Mash it well with a spoon .

2.Now you can fill each puri with the filling and garnish it with chopped onions,coriander leaves,tomato and serve it with pani................
