Duck Roast Kuttanadan style


Kuttanadan duck roast is famous for its taste.So those who wanted to make it try this recipe......

Ingredients

1.Duck -1/2 kg
2.Garlic - 1 tsp
3.Ginger - 1 tsp
4.Onion -2 big Sliced
5.Shallots/kunjulli - 1/4 cup
6.Chilli powder - 1 tsp
7.Coriander powder - 2 tsp
8.Turmeric powder - 1/4 tsp
9.Vinegar - 2 tsp
10.Pepper powder - 1/2 tsp
11.Salt for taste
12. oil
13.Curry leaves
14.Garam masala - 1 tsp


Preparation

1. Grind the kunjulli,ginger,garlic,chilli powder,turmeric powder,coriander powder,vinegar,salt,pepper powder into a fine paste.

2.Then marinate the duck with half of the masala paste for one hour. And after one hour fry the duck in oil till it becomes red in color .

3.Then saute the onions in the same oil and then add the curry leaves and rest of masala
to it and saute well.Then add the fried duck pieces to it and mix well,and in a pressure cooker cook it for 20 mts.....

You can garnish it with bioled sliced potatoes and fried onions......
