Amer Chutney - Bengali Recipe

Amer Chutney is an unripe mango chutney very popular among Bengali Dishes.It is a sweet and sour chutney ,in which chopped mangoes are cooked with seasonings and added jaggery.In which the special Bengali Masala called Panch Phoran is used to add flavour.This recipe will show you how to make Amer Chutney........

Ingredients needed to make Amer Chutney

1.Raw Mangoes Chopped - 1 cup
2.Jaggery Grated - 6 tsp
3.Dry red chillies - 2 no
4.Panch Phoran - 1 tsp
5.Mustard oil - 2 tsp
6.Turmeric powder - 1/4 tsp
Panch Phoran includes cumin seeds,nigella seeds,mustard seeds,Fennel Seeds,Fenugreek seeds.

How to make Amer Chutney

1.Cut the raw mangoes with the skin to small pieces.

2.Take half tsp of Panch Phoran and roast it well in a pan and then make fine powder out of it.

3.Heat the mustard oil in a pan and then add the rest of panch phoran and red chillies to it .

4.When the popping sounds comes out add the chopped mangoes,turmeric powder,salt and jaggery to it and mix it well.Also add nearly half cup of water to it.

5.Cook it covered till the mangoes become smooth enough.Mash it with a spoon .

6.Now turn off the fire and add the panch phoran powder to it.

You can also use the mangoes with taking its skin ,and add red chilly powder to it if you needed it spicy.....
