Beguni is a fried egg plant or brinjal snack from Bengal.The Brinjal is cut in to longitudinal way and coated with a batter made up of bengal gram ,salt and turmeric powder.As it is dish of Bengal should be fried in Mustard Oil .If you add poppy seeds it will add more taste .And by adding baking powder you can make it more crunchy.
Ingredients For Beguni Or Fried Egg plant
1.Egg plant (Brinjal/Baingan) - 1 large ,cut in to thin slices
2.Gram flour - 1 cup
3.Flour /Maida - 1/4 cup
4.Poppy seeds - 1 tsp
5.Red chilly powder - 1/2 tsp
6.Turmeric powder - 1/4 tsp
7.Baking soda - 1/2 tsp
8.Salt
9.Mustard Oil to fry
How to make Beguni Or Fried Egg plant
1.In a large bowl mix the gram flour ,maida ,poppy seeds,red chilly powder,baking powder,turmeric powder and salt.By adding water to it make it to a thick batter.
2.Heat the oil in a thick bottom pan or kadai.
3.Now dip each sliced egg plant in the batter and then deep fry it in the oil till it gets deep brown in color.
Drain it out from the oil and serve it hot.
