Kofta Pulao - Hyderabadi delicacy

Ingredients For Kofta Pulao

For Kofta Balls

1.Minced meat - 600 gm
2.Ginger garlic paste - 2 tsp
3.Turmeric powder - 1/2 tsp
4.Red chilli powder - 1 tsp
5.Sha Zeera - 1/2 tsp
6.Oil - 6 tsp
7.Garam masala powder - 1/2 tsp
8.Roasted chana powder - 100gm
9.Salt
10.Sliced onion - 4
11.Curd - 1/2 cup
12.Khus Khus - 50 gm

For the Rice

1.Basmathi rice - 1 kg
2.Chopped coriander leaves
3.Chopped mint leaves
4.Cardamom - 2
5.Cinnamon - 1
6.Cloves - 2
7.Salt
8.Ghee - 1 tsp

How to make Kofta pulao

1.To the minced meat add roasted chana powder,little red chilly powder,salt and saha zeera and make it in to round shape kofta balls.(Mix it well using a mixer and make balls out of it).

2.Heat the oil in a pan and saute the onions till it becomes transculant ,add ginger and garlic paste to it and saute it well .then add turmeric powder,red chilly powder and garam masala powder to it .Add khus khus paste to it.

3.Fry it for 2 mts and then add curd to it and mix it well.

4.Add Kofta balls one by one to it .Then cover it with a lid and cook the balls. When the gravy becomes thicken turn off the fire.

5.In another vessel heat the ghee and add cardamom ,cinnamon,cloves and then add water and salt to it when the water begins to boil add the rice to it.

6.When the rice become 3/4 th cooked drain it out from the water .

7.In a thick bottom vessel spread half of ghee at bottom and pour half of the rice over it.Spread out the kofta and the masala above it.Sprinkle lime juice, coriander and mint leaves.

8.On top of it spread one more rice layer ,add ghee on its top .Cover it with a lid and keep it on medium flame for 10 mts.

Now the Kofta pulao is ready to be served .It will taste good with dahi or raitha.
