Aloo Potoler Tarkari -Bengali vegetarian recipe


It is a curry in which potato and Parwal (pointed gourd) are the main ingredients used.And the parwal is a summer vegetable.In Bengali "Parwal" is known as "Potol".There is also a very special sweet dish prepared from Parwal known as sweet parwal.


Ingedients needed to make Aloo Potoler

1.Potato - 2 no
2.Parwal - 4 no
3.Ginger and garlic paste- 1 tsp
4.Salt
5.Cinnamon - 1 stick
6.Cardamom - 1
7.Cloves - 2
8.Onion - 1
9.Garam masala powder -1/2 tsp
10.Red chilly powder - 1 tsp
11.Turmeric powder -1/2 tsp
12.Oil - 3 tsp
13.Bay leaf - 1

How to make Aloo Potoler Tarkari

1.Peel the skin of Parwal well and then cut in to 1/2" pieces.Heat 3 tsp oil in the pan and then add the potatoes and parwal to it .Sprinkle little salt and saute it again till it becomes light brown in color.Then take it out from the oil and keep it aside.

2. In the same oil add cinnamon,cloves and cardamom and saute it for 2 mts.Then ad ginger and garlic paste to it .

3.Saute it again for another 2 mts till the raw smell goes.THen add red chilli powder,turmeric powder to it and saute it again.Then add the fried vegetables and 1 cup of water to it.

4.Cover it with a lid and cook it again.When the vegetables are cooked well.Adjust the salt to the dish and serve it with rice or roti.............
