Coffee pudding by lakshmi nair


Ingredients

1.Instant coffee powder - 2 tsp
2.Sugar -4 table spoon
3.Milk Maid -1/2 tin
4.Water - 2 cup
5.Gelatin - 2 table spoon
6.Fresh cream - 1 cup

Preparation

1.Soak the gelatin in 1/2 cup of cold water.

2.Boil the rest of 1 1/2 cup of water and add 2 tsp of coffee powder to it,add sugar to it.

3.Add the soaked gelatin to the hot coffee and melt it by stirring.

4.Add milkmaid to it and mix it well.Then beat the fresh cream and mix it slowly with the coffee mixture.

5.Pour it in a pudding tray and keep it in fridge to become set.

Serve it with cream.............

Banana Pan Cake

Pan cakes are thin ,flat round cake prepared from a batter and cooked in butter.Some use yeast for fermentation but here i am using baking powder.Pan cakes can be served as a break fast item or even a snack item.It can be served with jam ,cream ,chocolate cream.

Ingredients :Makes 10 pan cake


1. Robasata Banana -2
2. Powdered Sugar - 5 Table spoon
3.Maida /all purpose flour - 1 1/4 cup
4.Baking powder - 1 1/4 tsp
5.Milk - 1 3/4 cup
6.Egg -2
7.Almond powder - 1/3 cup (optional)
8.Butter - 50 gm
9.Salt a pinch

Preparation


1.Smash the banana with a spoon.Or beat the banana in a mixer.

2.Separate the egg white and yolk.And beat the egg yolk.

3.Mix the maida flour with baking powder.

4.Then in another bowl take the beaten banana , add the powdered sugar, egg yolk to it.Mix it well.Then add 1 1/4 cup milk to it and mix it well.

5.Then add the maida ,baking powder mix to it .Then add the almond powder to it.Add a pinch of salt to it.

6.Beat the egg white and mix it slowly to the batter.

7.Melt some butter in a pan and pour one spoonful of batter to it.No need to spread the batter.When one side become cooked turn the side and cook the other side.

Boodi Ladoo -North indian Sweet


At first i also don't know what is boondi .Then after searching a lot i got the information that Boondi is a sweet Rajastani fried snack made from chickpea flour.To prepare the boondi ladoo the basic ingredient is the boondi.You can make the boondi at home using gram flour / basen or you can buy it ready made from super markets.

To make the boondi gram flour batter is made to small balls by using a ladle with holes .Then these balls are deep fried in oil and then these are dipped in sugar syrup.


Ingredients to make 8 ladoo


1.Gram flour - 1 cup
2.Sugar - 1 1/2 cup
3.Water - 1 cup
4.Crushed cardamom - 1 tsp
5.Almonds - 1 tsp
6.Oil


Preparation

1.Make sugar syrup by boiling sugar along with 1 cup of water.While preparing the sugar syrup, add a few drops of milk. Impurities will collect on the surface in a layer and we can remove it.Make it till it becomes one string consistency.

2.Then make the batter by mixing gram flour with 1/2 cup of water. Make sure no lumps should be formed.Make the batter as it should be dropping out from the ladle holes.

3.Heat the oil in a pan and pour the batter on the top of the ladle with holes so that the drops came out from it .Then fry the boondi in the oil till it becomes golden yellow in color.

4.Add the boodi to the sugar syrup then add the cardamom powder,almonds to it and mix it well.

5. Rub some ghee on your palms. Make laddoos by squeezing the boondi mixture in your palms and making round balls.
